
Cucumber Cups with Salmon Mousse
with Terrine de Saumon Fume - Smoked Salmon Terrine
Ingredients:
Smoked Salmon Terrine Cucumbers
Red and Yellow Peppers
Directions:
- Peel cucumber leaving alternate strips unpeeled for color. Remove ends of cucumber, and then slice cucumber into 1"-1.5" sections.
- Rest each section on end and hollow out seeds, leaving 1/4" on bottom to form base of each cup.
- Fill each cup with 2 tablespoons of Salmon Mousse: mold top of mousse with a spoon.
- Garnish top with crisscrossed strips of red and yellow pepper for color.
Servings:
